And by healthy I mean incorporating a ton of fruits and vegetables into my meals.
Understanding portions and what my body needs.
The cravings I use to have, well, I don't have them anymore.
In fact, this evening my mom was craving a coffee from Dunkin Donuts, so being the amazing daughter I am ;) I went on a hunt for a Dunkin Donuts.
And let's say the old me, and the hubby is in agreement, the OLD me would have ordered a large iced Frappuccino coffee with a donut. That is more than safe to say.
However, I walked in, got her coffee, picked the family up a dozen (my dad got a craving as well hehe) and walked out.
They smelled great, sure, but there was not one ounce of a desire to eat one at all. Not even a little.
So for that, I am very proud of myself :D
Another time I'll elaborate more on that topic, BUT it was something I noticed I did and felt quite accomplished. :) and just another little sign that reminded me that I have come quite a ways.
ANYWAYS! Back to the point of the blog, which is a full day of my meals. I figured maybe once a week I'll do one of these. I am still learning new, quick and easy meal ideas - so I'll be sure to share when I find great ones.
Here is my day =)
*side note* I don't count calories so I am not sure what all this added up to, but I will say that everything I had today made me feel amazing and energized*
Breakfast---
[Tsp of olive oil with a little bit of garlic and onion.
2 eggs. Made sure to not keep the spinach cooking for no more then 2 minutes or so.]
[My Favorite! I LOVE my breakfast smoothies! I have been experimenting with different fruits, so this was a new one I tried]
1/2 cup water 1/2 cup almond milk
Handful of spinach, 1 kale leaf, tbsp. of coconut flakes, cup of frozen pineapples, and 1 chopped pear.
[Be sure to cut the stem out;)]
[And I sprinkled some flax seed on top, delish!]
[Voila! -- verdict on this recipe for the smoothie was awesome! It comes out a tad bit tart because of the pear, but it reminded me of eating a granny smith apple. So I totally dig that tart sweet flavor ;)]
Snack---
[Activia yogurt this one was strawberry :D]
Lunch--
[2 slices of lean turkey meat, spinach (can you tell I LOOVE spinach? ;)), tomato slices, tsp of vinaigrette and some mustard]
[with some goldfish (another little guilty pleasure haha) and my favorite drink, water with some lemon]
Dinner---
We were having chicken wings, rice and canned corn. A very easy dinner, and one that we do often because it's easy and quick to do.
But I decided to substitute the canned corn and rice with these veggies.
And instead cook the spinach and kale with olive oil and garlic.
The cucumbers with some vinaigrette.
And the zucchini with panko crumbs and baked.
The rice and corn typically takes around 30 minutes to make, and my fresh vegetables only took 20.
Spinach and kale with a little olive oil and garlic 2 minutes, the kale took about 5.
Cucumber with vinaigrette, maybe a minute?
The zucchini was each dipped in egg white (2), covered in panko crumbs mixed with a little parmesan cheese and pepper, then baked for 5 minutes one side, 10 on the other.
Everything was incredibly filling and satisfying. I didn't feel full and sleepy (like I normally did after eating rice) I felt energized and was ready tackle my evening workout.
[to drink, which is my only other drink I enjoy having aside from water, is a little crystal lite and a tbsp. of chia seeds]
[SO AMAZING AND DELICIOUS!]
Dessert---
My kids had a little left over apple and pear they didn't finish with their dinner, so I cut them up into tiny little squares, and added a little honey and cinnamon.
Very great as well, I was pleasantly surprised how good it was.
So if there is anything that days like this have taught me, is your body is very very responsive to what you feed it. You feed it the right stuff, you fuel your body with what it NEEDS and you will FEEL the difference. You will have so much energy =)
I don't feel like I am punishing myself, or twisting my own arm to eat 'better.'
Everything is starting to come second nature, and I am absolutely seeing as well as feeling the benefits.
